Aam Panna



Hubby has been talking about aam panna since the time raw mangoes have appeared in the Bangalore markets, so I decided to make it yesterday.

Aam Panna or Kairi Panna is a summer drink made both in north india and in Maharashtra and perhaps Gujarat too. It is truly a refreshing drink and a great cooler.

This is how I made it...



Ingredients

2 raw mangoes (I used the totopuri mango),
¾ cup of sugar,
1 ½ tsp roasted cumin powder,
1 ½ tsp crushed black pepper,
½ tsp black salt,
Some mint leaves

Method

Cook the whole raw mangoes till done. I pressure cooked it. When cool peel the mangoes and extract the pulp. This is a messy job but you think of the lovely panna now and you won’t mind the mess.

Blend the cooked mango pulp with the sugar till it forms a uniform blend. You can add more sugar if you want it to be sweeter. Pour this blend into a big jug and add the roasted cumin powder, crushed black pepper and black salt. Add about a litre of chilled water and blend well. Serve chilled topped with mint leaves.
